Bikini Recipe

Yields 10 people

For the Clementine Syrup (produces 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar

Ingredients for the Drink (yields 850ml, to serve 10)

400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, to finish

Instructions

For the Syrup: Put all the ingredients in a saucepan, heat until it reaches a simmer, agitating so the sugar melts. After that, take off the stove and let it to cool entirely. Decant into a sterilised bottle, seal and store chilled, where it will keep for around a month.

Preparing the Cocktail Base: Mix all the spirits and syrup in a big jug, allow it to infuse for an hour, then pass it through best through a fine cloth, to ensure it's fully clarified.

When ready to serve: Pour 85ml from the batch mix into a stirring glass containing ice, and agitate gently for about 60 seconds to cool it down. Filter into a chilled martini glass or a similar vessel, garnish with a few cranberries and finish with a brief mist with the mandarin essence over the drink.
